Tipping / Gratuity for bookable experiences

As a merchant, we want to offer required and/or optional tipping to our customers who book experiences with us. Although Shopify already offers this feature, it's 100% optional. Additionally, it needs to be a different line item in the checkout so we can separate it from the total amount paid for tax purposes as some municipalities tax it different than other items.
