Include "untracked" add on

As a merchant I would like to allow customers who are booking to add additional products that need to be paid for but don't ultimately impact the overall booked inventory. For example, I sell tours with a resource which has 10 slots available but I also want the customer to be able to add additional non-resource tours for an additional cost.
