Don't require a customer email when creating a new order in the Shopify POS app

Surprisingly, some customers don't have an email address but merchants often collect the phone number per gov't guidelines (C-19) in some places. However, even when email is collected, the phone number is also collected anyway. It'd be great to not have to enter an email as the Experiences POS currently requires.
