As a merchant I would like to place some bookings on hold temporarily and send the customer an invoice

Similar to Tock, we would like the ability to create a temp. booking that removes inventory for a customer, then end the customer's email at which point the customer would be able to "complete" the booking by paying for it ahead of time or if they don't after a specified time frame, the inventory would become available again.
