Allow for bookable experiences that don't have a day/time

Feature Request
As a merchant, I want to create a bookable event that doesn't have a day/time attached to it. It would be helpful to be able to add a day and time after the fact AND/OR allow the customer to "convert" their purchase into a booking when the day/times are available.

    And also it would be great if customers could choose a time/date for X event and then that block of time cannot be booked for any other event.
