Allow for bookable experiences that don't have a day/time

As a merchant, I want to create a bookable event that doesn't have a day/time attached to it. It would be helpful to be able to add a day and time after the fact AND/OR allow the customer to "convert" their purchase into a booking when the day/times are available.
